Balsamic Bruschetta

INGREDIENTS

1 loaf French stick, cut into sliced

3 tablespoons olive oil

5 tomatoes, diced

1/3 cup basil, chopped

1 cup parmesan cheese, grated

2 cloves garlic, minced

2 tablespoons balsamic vinegar

1/3 teaspoon salt

¼ teaspoon pepper

METHOD

Preheat oven to 180 degrees.

Lightly brush bread slices on both sides using 2 tablespoons of olive oil.

Toast bread for 5-10 minutes, turning halfway. Toast until golden.

In a bowl, combine tomatoes, balsamic vinegar, basil, garlic, parmesan cheese, salt and pepper.

Spoon mixture onto toast slices and serve.
