Fattoush Salad

Serves:  6

INGREDIENTS

3 pita bread, cut into small pieces

1 cup cherry tomatoes, diced

1 cup cucumber, diced

1 handful parsley, roughly chopped

1 handful mint leaves

¼ red onion, finely sliced

1 head lettuce, cut into small pieces

4 radishes, finely sliced

2 tablespoons olive oil

Dressing:  

3 cloves garlic, crushed

3 tablespoons olive oil

5 tablespoons white wine vinegar

Salt & pepper to taste

METHOD

Preheat the oven to 180 degrees. Place cut pita bread onto a baking tray and drizzle with olive oil. Toast for 5-10 minutes or until golden and crispy.

In a large bowl, combine lettuce, toasted pita, cucumber, tomatoes, onion, parsley, mint, and radishes.

In a small bowl, combine dressing ingredients and drizzle over the salad.

Serve.
